On the second day of lavender, bartender gave me to me: a fruity riff on a mojito.

I’ve a strange tendency to turn Christmas songs into everyday ditties when my brain has the wherewithal to do so. Usually, when I’m in a decent mood yet something annoying happens to me, so I turn whatever occurred into music to get over it. I can’t even say I’m irritated today, but putting a tune to these Blackberry Lavender Mojitos felt right. Probably because they’re delicious, and worth singing about.
I bought a four ounce bag of lavender flowers the other week: doesn’t sound like much, but for something you use very little of at once, four ounces will linger for eternity in my pantry if I’m not clever. Yesterday I shared a batch of White Chocolate Glazed Lavender Coconut Scones that definitely suit an afternoon snack attack, and this mojito is the perfect nightcap for a very lavender day.

The lavender infuses the cocktail via simple syrup, just a dissolved triage of water, dried flowers, and sugar. Muddle some blackberries and mint leaves in the bottom of a shaker – the mint leaves are what channels the mojito vibe of the drink despite the other modifications – and pour in some syrup, rum, and fresh lemon juice. A splish of sparkling water finishes the tale.
This beverage is a crowd pleaser. Special enough for a spring soiree, but accessible for a regular refreshment if you’re inclined to home happy hours. Plus, you’ll feel rather fancy sporting a deeply hued, beautifully garnished glass even if you’re just lounging on the couch watching hockey.

Balsamic Blueberry Basil Smash
Spicy Pineapple Ginger Margarita

Ingredients
- 1/4 cup blackberries
- 3-4 mint leaves
- 3-4 tbsp lavender simple syrup (recipe below)
- 2 oz white rum
- 1/2 oz lemon juice
- sparkling water, to top
- mint leaves, dried lavender sprigs, and blackberries, for garnish
lavender simple syrup
- 1/2 cup sugar
- 1/2 cup water
- 1 tbsp dried lavender flowers
Instructions
- Bring sugar, water, and dried lavender to a boil for 3-5 minutes until sugar dissolves. Pour into an airtight container and let cool to room temperature.
- In the bottom of a cocktail shaker, muddle blackberries and mint leaves. Pour in lavender syrup, rum, and lemon juice. Add ice and shake, then strain in a glass over ice. Top with sparkling water and finish with mint leaves, lavender, and blackberries. Bottoms up!
