frozen citrus mango daiquiri
Ya’ll. I got selected for the Chicago Marathon in October! Celebratory toast, anyone?
My first and only marathon occurred in 2019. Big Sur. I ran it off limited training due to a severe hip injury that sidelined me for three months. I recall the long hours I passed on the elliptical, up to 3 hours in fact, trying to maintain my endurance and some semblance of muscle memory because I could not stomach a DNF during the April race. One experience I will likely never forget: the beauty, the discomfort, the final surge across the finish after seeing J along the sideline cheering me on. I wept when the volunteer hung the medal over my head. Well, dry wept. Pretty sure actual tears couldn’t happen after that 26.2 mile exertion.
So, I’ll be doing it again, and so will J since he also was selected in the lottery. Chicago is flat and fast (“fast”) so the training will certainly look different than Big Sur’s did. I hope for little more than an injury free cycle this time, since my past two were riddled with major setbacks. I say two because I was training for 2020 Big Sur, but for obvious reasons that didn’t occur. Good thing, too, since I was off the roster with a calf problem and was about to relent and not race it in survival mode like I had the previous year.
These daiquiris are wonderful if you need a simple, scrumptious drink to tide you through a celebration, whether for something large and life-changing or just because you made it through the week. I’ll tell you, this week for me was arduous and odd, and I can’t wait to tip back a glass and relax. Frozen mango, orange and lime juices, muddled mint, and lots of ice comprise this cooling, sweet treat which contains no artificial sugars and plenty of rum. I won’t tell if all the rum is gone after. Might want to restock in case Jack Sparrow comes through, though.

Ingredients
- 1/4 cup mint leaves
- 3 tbsp lime juice
- 1/2 – 3/4 cup white rum
- 1/2 cup fresh squeezed orange juice (or good quality store brand)
- 2 cups frozen mango chunks
- 1.5-2 cups ice
Instructions
- In a cocktail shaker, muddle the mint leaves and lime juice thoroughly. Add rum and orange juice. Give the thing a good few shakes, then strain into a blender. Toss in mango chunks and ice. Blend until frosty and thick. Serve garnished with mint leaves and citrus slices, as desired.
