It’s Friday, and guess who’s fully vaccinated! Me. Well, both J and I are now, actually, which translates to a new and unfamiliar ability to fill up our calendars with weekly fun for the first time in over a year. Never fear – Friday Cocktails and Home Happy Hours will still fill up the recipe feed.
It is quite odd to think that we can plan outings, go to dinner, even take a vacation come June. Granted, the environment still houses the strains of the still-raging pandemic, so it’s not like we’re going to abandon caution and be among those who frump into an establishment and get huffy and shocked when asked to wear a mask. We always carry our PPE with us. Never intend to disrespect the rules of courtesy. However, with our vaccinations complete and our immune systems ready to fight, at least we can resume some normal activities. I am grateful and excited and in many ways relieved.
If you are vaxed, about to be, or just want to celebrate the simple pleasure of a weekend, the Rosemary Peach Bourbon Fizz is your simple fix. Roasting the peaches is not a requirement, but brings forth more of the sweet juiciness of the fruit, so I recommend you try it that way if you’ve the time. Otherwise, the process is so simple: muddled peach, rosemary, and lemon juice, your favorite bourbon, and a touch of apple cider vinegar before a bright layer of sparkling water.

Ingredients
- 4 peaches, halved with pits removed
- 1 tbsp honey, plus additional for the cocktail
- 2 sprigs rosemary
- 1 oz lemon juice
- 2 oz bourbon
- 1/4 oz apple cider vinegar
- sparkling water, to top
Instructions
- Heat broiler to high. Drizzle peach halves with honey and broil for 8-10 minutes until soft and charred. Remove and let cool on the counter about 5 minutes. This will make more than what you need for one cocktail. You can also omit the broiling process and just use the peaches as they are.
- Pick the leaves off the rosemary sprigs. Muddle in the bottom of a cocktail shaker with one whole peach (2 halves), 1-2 tsp additional honey (optional), and lemon juice. Pour in bourbon and cider vinegar. Add ice and shake. Strain over ice in a glass. Top with sparkling water and garnish with fresh peach slices and a rosemary sprig.
